Phycocyanin Introduction: Spirulina is a kind of filamentous multicellular spiral prokaryotic algae, which has the characteristics of high protein content and fast propagation speed. Spirulina is rich in protein, fat, vitamins, minerals, chlorophyll and polysaccharides. It is an ideal food and drug resource. The phycobiliprotein contained in spirulina is an important pigment protein, which is mainly composed of phycocyanin, allophycocyanin, and phycoerythrin.
 
Phycocyanin is a kind of phycobiliprotein extracted from spirulina. It is a special pigment protein. It’s amino acid composition is reasonable, wherein the essential amino acid content accounts for about 40% of the total amino acids. Due to its good water solubility, non-toxicity, and strong coloring ability, phycocyanin is widely used as a natural pigment in food colorant and cosmetic additive. At the same time, phycocyanin is fluorescent and can be used as a fluorescent marker.
 
Phycocyanin is a natural blue pigment approved by the FDA. The European Union has listed it as a color food ingredient, and its use in food is unlimited. GB2760 food additives catalog also allows phycocyanin to be used as a natural colorant.
 
 
Application
 
Phycocyanin can be widely used in food, beverage, tablet candy, cosmetics, medicine and health care, animal feed, crop fertilizer, etc.
 
1. Food. Phycocyanin is a natural pigmented plant protein that can be used in ice cream, pastries, jellies, candy, chewing gum, dessert cakes, beverages, etc.

2. Domestic and foreign literatures show that natural phycocyanin has antioxidant activity to scavenge free radicals. Phycocyanin is a collagen-like protein that has moisturizing, anti-allergic, anti-inflammatory and anti-freckle functions, and can help repair cells.

3. Healthcare products. Studies show that phycocyanin has health effects such as delaying aging, anti-tumor, anti-radiation, improving immunity, and nourishing blood.

4. Medicine. It can exert a variety of pharmacological activities.

5. Fertilizer. Phycocyanin is the most important type of light-sensitive protein in the phycobiliprotein series. It is a light-harvesting antenna in algae cells, and has rich nutrition and comprehensive amino acids.

Spirulina Extract (2013) and Butterfly pea flower Extract (2021) are the only natural blue coloring approved by the US FDA.

Spirulina extract may be safely used for coloring confections (including candy and chewing gum), frostings, ice cream and frozen desserts, dessert coatings and toppings, beverage mixes and powders, yogurts, custards, puddings, cottage cheese, gelatin, breadcrumbs, ready-to-eat cereals (excluding extruded cereals), coating formulations applied to dietary supplement tablets and capsules.
