Phosphatidylserine(PS) is a kind of phosphatidylcholine which has a good effect on the brain and nervous system. It is for an important nutrient, known as brain vitamins, for maintaining normal memory, response, and health of the brain. It is widely found in plant seeds, animal brain and viscera, and egg yolk.
 
PS mainly comes from animal and plant extraction and enzymatic transformation. It is difficult to isolate PS from plants for its low content and purity. And, because of mad cow disease and other animal diseases, the safety of PS which is extracted from animals cannot be guaranteed. With enzymatic transformation, PS was produced from natural lecithin with serine in the presence of phospholipase. It is an ideal method for preparing PS at present because of its high efficiency and controllability, low carbon, eco-friendliness, and safety. In the market, the main natural lecithin used for PS comes from soybean. In addition, researches showed that the PS enzymatic transformated from soybean and the PS extracted from bovine cerebral cortex have the same effect.
 
In 1986, it was first reported that PS can improve cognitive ability. Since then, a number of double-blind trials, studies and clinical trials in Europe and the United States have demonstrated that PS can improve behavior and cognitive performance without obvious side effects. By now, PS has been widely used in Alzheimer's disease and memory loss in many countries. What’s more, domestic and foreign studies also found that PS can be used for depression, mental stress, and physical fatigue.
 
In 2006, KFDA allowed the addition of PS-added products to promote its function of preventing low awareness among the elderly. In the same year, PS was certified by the FDA in the US with GRAS (Generally Recognized As Safe) and can be added to food such as yogurt, bread, powdered milk, solid drinks, with the recommended daily intake 600 mg/ D. In 2010, Ministry of Health P.R.China listed soybean-derived PS as a new resource food. In 2011, the EU approved soybean PS as a new food ingredient which can be added to yogurt, powdered milk, cereal biscuits, and other products.
